Sanuki Udon

Kagawa is famous for its udon noodles (Sanuki is an archaic name for Kagawa). Unlike the surrounding prefectures, the climate in Kagawa is suited for growing wheat instead of rice. The wheat is eaten in the form of udon noodles.

Udon noodles are thick and chewy. To develop the gluten, traditionally the dough is kneaded by feet (in a plastic bag for sanitary reasons).

Kagawa's udon is so famous that its tourism website is named Udon Prefecture.
